Ingredients

  • 2 Butcherbox salmon fillets

  • 2 cups seasonal vegetables

    (e.g., zucchini, bell peppers, green beans, or carrots), chopped

  • 1 tbsp olive oil

  • 1 1/2 tbsp butter

  • 2 cloves garlic

  • Zest and juice of 1/2 lemon 

  • 1/2 tsp Lemon Pepper Bright & Zesty Seasoning 

  • Salt and pepper

    to taste

  • Fresh parsley

Preheat your oven to 400°F

In a small bowl, melt the butter in the microwave or over low heat.

Whisk in the minced garlic, lemon zest, lemon juice, and Lemon Pepper Bright & Zesty Seasoning. Add a pinch of salt and pepper and stir until combined.

Line a baking sheet with parchment paper.

Place the salmon fillets on the baking sheet and arrange the seasonal vegetables around them.

Pour the lemon garlic butter sauce evenly over the salmon fillets, ensuring each fillet is well coated. Drizzle the remaining sauce over the seasonal vegetables and toss lightly to coat.

Place the baking sheet in the oven and roast for 12-15 minutes, or until the salmon is cooked through (internal temperature should reach 145°F/63°C) and the vegetables are tender.

While waiting for the salmon, finely chop parsley or any fresh herbs you'd like to use as a garnish. Slice lemons into wedges for serving.
