For the oven frites

  • 2 large russet potatoes

  • 2 Tbsp grapeseed oil

    or your favorite high-heat oil

  • kosher salt

    to taste

  • black pepper

    to taste

For the tomato marmalade

  • 1 shallot

    minced

  • 1 pint cherry tomatoes

    halved

  • 3 Tbsp sherry vinegar

  • 3 Tbsp honey

For the burgers

  • 1 lb ButcherBox Grain Finished Ground Beef

  • 4 Tbsp unsalted butter

  • 2 Tbsp grapeseed oil

    or your favorite high-heat oil

  • 3-4 slices cheddar cheese

  • 1 head romaine lettuce

    finely chopped

  • 3-4 brioche buns

Prepare the potatoes:

Preheat oven to 400°F. Cut potatoes into wedges and toss with oil, salt, and pepper. Arrange on a foil-lined tray, ensuring space between each wedge. Roast for 45 minutes, rotating every 15 minutes, until golden brown.

Make the tomato marmalade:

Combine all marmalade ingredients in a medium pan over medium heat. Cook for 10 minutes until the liquid evaporates and the tomatoes are jammy. Set aside.

Cook the burgers:

Form ground beef into 3-4 patties. Heat a cast iron pan over medium heat. Toast buns in butter until golden brown. Wipe the pan clean, then heat oil over medium-high heat. Season patties with salt and pepper, sear in the pan, flipping every minute for 5-6 minutes for medium doneness. Top with cheese, turn off the heat, and cover to melt.

Assemble the burgers:

Place the cooked patties on the toasted buns, add tomato marmalade, lettuce, and top with the other half of the bun. Serve with the oven frites.
